做法(fǎ ):春(chūn )笋切成片后加少许盐捞出后(hòu )用(yòng )清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻(fān )炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火(huǒ )煮开(kāi )后(hòu )转中火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
