做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清(qīng )水把陈皮泡软,拍裂一(yī )小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待(dài )油六成热(rè )下鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他材(cái )料,武火煮(zhǔ )沸,转(zhuǎn )中(zhōng )小火煲一个半小时,下盐调味即可品(pǐn )尝。
