做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍(pāi )裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好的鲫(jì )鱼和(hé )其他(tā )材料(liào ),武(wǔ )火煮沸,转中小火(huǒ )煲一个(gè )半(bàn )小时,下盐调味即可品尝。
