做法:洗净(jìng )宰好鲫鱼,洗净淮(huái )山和薏米。用(yòng )清水把陈(chén )皮泡软(ruǎn ),拍裂(liè )一小块姜,热锅,用(yòng )姜(jiāng )块在锅上擦一遍,放两勺油,待油六(liù )成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时(shí ),下盐调(diào )味即可品尝。
