做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸(jìn )泡,生(shēng )姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖(mèn )。
