做法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜(jiāng )块(kuài )在锅上擦一遍(biàn ),放两勺油,待油六成热下(xià )鱼(yú ),煎至微黄。煮沸瓦煲(bāo )里的清水,放入(rù )煎(jiān )煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮(zhǔ )沸,转中小(xiǎo )火煲一个半小时,下盐调味(wèi )即可品(pǐn )尝。
