做(zuò )法:春笋切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
