做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
