做(zuò )法:春笋切(qiē )成片后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻(fān )炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
