做法:洗净宰(zǎi )好(hǎo )鲫(jì )鱼,洗净淮山和薏米。用清水把陈皮泡(pào )软,拍裂一(yī )小块姜,热(rè )锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里的清(qīng )水,放入煎煮好(hǎo )的鲫鱼和(hé )其他材料(liào ),武火煮沸,转中小火煲一个半小时,下盐调(diào )味即可(kě )品尝。
