做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切(qiē )成(chéng )段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开(kāi )后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
