做法:春笋切成(chéng )片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热(rè ),倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的(de )时候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
