做法(fǎ ):春笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量(liàng )清水半(bàn )掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬(áo )干(gàn )的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
