做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块(kuài )在锅上擦一遍,放两勺油,待油六成(chéng )热下鱼(yú ),煎(jiān )至(zhì )微(wēi )黄(huáng )。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材料(liào ),武(wǔ )火(huǒ )煮沸,转中小火(huǒ )煲一(yī )个半小时(shí ),下盐调味即可品尝。
