做法:春笋切成(chéng )片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入(rù )少量清(qīng )水半(bàn )掩住(zhù )春笋,盖(gài )上锅(guō )盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
