做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗(xǐ )净淮山和薏米(mǐ )。用清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅(guō )上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入(rù )煎煮好的鲫鱼和其他(tā )材料,武(wǔ )火煮沸,转中(zhōng )小火煲(bāo )一(yī )个半小时,下盐(yán )调味即可品尝。
