做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清水(shuǐ )把(bǎ )陈(chén )皮泡软,拍裂一小块(kuài )姜(jiāng ),热锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其他材(cái )料,武火煮沸,转中小火煲一(yī )个半(bàn )小时(shí ),下盐调味(wèi )即可(kě )品(pǐn )尝。
