做法:洗净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈(chén )皮(pí )泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦(cā )一遍,放两(liǎng )勺(sháo )油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小火(huǒ )煲一(yī )个半小时,下盐(yán )调(diào )味即可(kě )品尝。
