做法:春笋(sǔn )切成片(piàn )后加少许盐捞出(chū )后(hòu )用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
