做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸(jìn )泡,生(shēng )姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干(gàn )的时(shí )候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
