做法:春笋切成片后(hòu )加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切(qiē )片,葱切成(chéng )段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
