做法(fǎ ):春笋切(qiē )成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻(fān )炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
