做(zuò )法:春笋切成(chéng )片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半(bàn )掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
