做(zuò )法:洗净(jìng )宰好鲫(jì )鱼(yú ),洗净淮山和薏米。用清水把(bǎ )陈皮(pí )泡软(ruǎn ),拍裂一小(xiǎo )块姜,热锅,用姜块(kuài )在(zài )锅(guō )上擦一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小火煲一个半小(xiǎo )时(shí ),下盐调味即可品尝。
