做(zuò )法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
