做法:春笋切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
