做法:洗净(jìng )宰好鲫鱼,洗净淮山和(hé )薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一(yī )小块(kuài )姜,热锅,用姜(jiāng )块在锅上擦(cā )一遍,放两(liǎng )勺油,待油六成(chéng )热下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下(xià )盐调(diào )味即可品尝。
