做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒(chǎo )均匀(yún )稍(shāo )收汁时(shí )盖(gài )上锅盖焖(mèn )。
