做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖上锅(guō )盖(gài )大火(huǒ )煮开(kāi )后转中火。煮到水快熬(áo )干的(de )时候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上(shàng )锅盖焖。
