做法:洗净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和薏米(mǐ )。用清水把陈皮泡软,拍裂(liè )一(yī )小块姜(jiāng ),热锅,用姜(jiāng )块在(zài )锅上擦一遍,放两勺油,待油六成热下鱼(yú ),煎至微黄(huáng )。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转中小火(huǒ )煲一个半(bàn )小时,下(xià )盐调味即可品尝。
