做(zuò )法:春(chūn )笋(sǔn )切成片后加(jiā )少许盐捞出后(hòu )用清(qīng )水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
