做法:洗净宰好(hǎo )鲫鱼,洗净淮山和(hé )薏(yì )米(mǐ )。用清水把陈皮泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用姜块(kuài )在锅上(shàng )擦一遍,放两勺(sháo )油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材(cái )料,武(wǔ )火煮沸(fèi ),转中小火煲一个半小时,下盐(yán )调味(wèi )即可品尝。
