做法(fǎ ):春笋切成片后(hòu )加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻炒(chǎo )1分(fèn )钟(zhōng )左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
