做法:洗净宰好鲫鱼,洗(xǐ )净淮(huái )山(shān )和薏(yì )米。用清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待(dài )油六成热下(xià )鱼,煎至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小时,下(xià )盐调味即可(kě )品(pǐn )尝。
