做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两(liǎng )勺油,待(dài )油六成热下(xià )鱼,煎(jiān )至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮(zhǔ )好的鲫(jì )鱼和其他(tā )材(cái )料,武(wǔ )火煮沸,转中小火煲一个半小时(shí ),下盐调味即可(kě )品尝。
