做法:洗净宰(zǎi )好(hǎo )鲫鱼,洗净淮山和(hé )薏米。用清水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅,用姜块在锅上(shàng )擦一遍,放两勺油,待(dài )油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的(de )清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中小火煲一个(gè )半小时,下盐调(diào )味即可品尝。 -
