做法:洗净宰(zǎi )好鲫鱼,洗(xǐ )净淮山(shān )和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块(kuài )姜,热锅,用姜块在锅(guō )上擦一(yī )遍,放两勺(sháo )油(yóu ),待油六成热下(xià )鱼,煎至(zhì )微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即可品尝。
