做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅,用(yòng )姜块在锅上擦(cā )一遍,放两(liǎng )勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入煎煮好(hǎo )的鲫(jì )鱼(yú )和其他(tā )材料,武火煮沸,转(zhuǎn )中小火煲一个半小时,下盐调(diào )味即可品尝。
