做法:春笋切(qiē )成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅盖焖。
