做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅(guō )烧热,倒入2勺(sháo )油,放入(rù )生姜(jiāng )、春笋(sǔn )、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火(huǒ )。煮(zhǔ )到水(shuǐ )快(kuài )熬干(gàn )的时候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
