做法(fǎ ):洗净宰好(hǎo )鲫鱼,洗(xǐ )净(jìng )淮(huái )山(shān )和薏米。用(yòng )清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六(liù )成热下鱼,煎至(zhì )微黄。煮(zhǔ )沸瓦(wǎ )煲里的清(qīng )水,放入(rù )煎煮好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一个半小(xiǎo )时,下盐调味即可品尝。
