做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水把(bǎ )陈皮泡软,拍(pāi )裂(liè )一(yī )小(xiǎo )块姜,热(rè )锅,用姜(jiāng )块在(zài )锅上擦一遍,放两勺油,待(dài )油六成热下(xià )鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时(shí ),下盐调味即可品尝。
