做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到(dào )水(shuǐ )快(kuài )熬干的(de )时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
