做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖(mèn )。
