做(zuò )法:春笋(sǔn )切(qiē )成片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中火(huǒ )。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖焖。
