做法:洗净(jìng )宰好鲫鱼,洗净淮(huái )山和薏米。用清水(shuǐ )把陈(chén )皮(pí )泡软(ruǎn ),拍裂一小块(kuài )姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两(liǎng )勺油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个半小时(shí ),下盐调味即可品尝。
