做(zuò )法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少量(liàng )清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
