做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮(pí )泡软,拍裂一小(xiǎo )块姜,热锅,用姜块(kuài )在锅上(shàng )擦(cā )一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的(de )清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他材(cái )料,武火(huǒ )煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐调味即可品尝。
