做法:春笋切成片后(hòu )加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水(shuǐ )快(kuài )熬干的(de )时候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上(shàng )锅盖(gài )焖。
