做(zuò )法(fǎ ):春笋切成(chéng )片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒(chǎo )均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上(shàng )锅盖焖。
